May in Edinburgh is still cold by most people's standards, which is the point — the cold is what the pub culture was invented to address. The city is organized around the castle on the hill the way all honest cities are organized around something true. The Scotch whisky trail is serious geography expressed through taste; approach it as education, not tourism. The seafood here is genuinely extraordinary and has been systematically undersold for decades. Haggis, eaten correctly in a good restaurant, is not what people expect. If the schedule allows, the Highlands are two hours north and they will reorganize your understanding of scale in a way that is difficult to explain until it happens.
